The fabled countryside of Burgundy is a world-renowned favorite among lovers of great wines. In addition to its exceptional terroirs, Burgundy is distinctive among French regions for the imprint it bears to this day of the visionary labor of Cistercian monks in the Burgundian wine industry from the very earliest years. The history of the Cellier aux Moines and its vineyards, established at Givry in the twelfth century by monks from the Abbey of La Ferté, testifies to this heritage, both temporal and spiritual.
After a long career in management in the luxury goods industry, Philippe Pascal, together with his wife, Catherine, returned to the heart of Burgundy and devoted themselves to winemaking. In 2004, after falling in love at first sight with the Cellier aux Moines, the Pascals embarked with passion on the long process of restoring the estate's buildings and its vineyards. In 2006 they pressed their first vintage, and in 2012 decided to fully commit to their new life as artisanal winemakers, inspired in their search for excellence by their Cistercian predecesseors.
The Pascals' encounter with Burgundian historian Gilles Platret has made it possible to retrace the story of the Cellier aux Moines across the nine centuries of its history, a story told here for the first time.
